Happy New Year everyone!! Goodbye 2020 and howdy 2021! Boy, I didn't think that I'd ever feel so elated to have those words come out of my mouth. It's a new year with 12 new months to do something amazing.

With that being said, I personally think that chowing down a plate full of deliciously creamy Low Calorie Beef Stroganoff is a great way to start.

It's no shocker at all that I have been so incrediby  MIA from my little blog space. I had all of the intentions in the world to pick back up where I left off at the end of 2019.

I was drowning in fab recipe ideas and I was so ready to share them with my pals. However, in good old 2020 fashion, I came down with debilitating health issues that put all of my magical plans to a halt.

My health (or lack thereof) became the center of my focus and I went from feeling like an unstoppable unicorn, to an injured little ducky just trying to stay afloat.

To add to the craziness (because 2020 showed NO mercy), the rest of my free(ish?) time was spent navigating life as a registered nurse in the midst of a pandemic. Fun fun!

Safe to say, comfort food became VITAL to maintain some sanity and honestly speaking, I may have over-indulged a little. But then again, do 2020's caloriesreallyeven count? I think we all deserved a free pass.

Anywho, onto more positive things. Because 2020 wasn't ALL bad. There were definitely some high points too! Just to name a few:

  1. Wifey and I celebrated our 1 year anniversary ♥
  2. We built our first home and closed in September
  3. I was blessed with another deliciously adorable nephew to spoil
  4. I was blessed with job security as an RN during such uncertain times
  5. We welcomed our precious puppy, Millie into her (fur)ever home in November

So in the grand scheme of things, 2020 wasn'tabsolutelyterrible for me personally. I would give it a solid 5/10...if I want to be generous.

Now, back to this recipe. I mentioned that I may have over indulged in calories and welp, I certainly gained the inches to prove that.

However, the weather is still gloomy and comfort food is still a must. That's where this insanely delicious Healthy Beef Stroganoff recipe comes in. I'm talking all of the comfort, all of the flavors, all of the NOMS, with none of the guilt.

I personally believe that the key to a good beef stroganoff is to start off with good quality beef. Something that can be sliced thinly and won't get overly tough when cooked.

I used flank steak, but skirt steak or any other good quality steak will work just as well.

When cooking the steak, I find that searing on high heat for 1-2 minutes on each side yields the best results. By doing it this way, you'll end up with thinly cooked, tender and juicy pieces of steak that you could honestly devour plain.

To ensure that the steak slices cook evenly, it's very important to not let the steak slices overlap in the pan when cooking. If you're working with a smaller sized pan or skillet, it's perfectly fine to sear the steak in batches. This is actually what I ended up doing.

Once the steak has been cooked, you're going to transfer the slices to a plate and turn the heat down to medium. Add the mushrooms, onions, garlic, flour and seasonings and cook until the mushrooms and onions are slightly tender.

In a separate bowl, you'll gradually combine the almond milk with the sour cream, mustard and Worcestershire sauce then add to the skillet. Mix in the beef stock and simmer for about 5 minutes.

Then you'll add the steak slices back into the skillet, combine and continue to simmer for approximately 10 more minutes.

As your stroganoff sauce is simmering, now is a good time to cook your pasta. Simply add the egg noodles to boiling water and cook until slightly tender oral dente.Drain and set aside.

Turn the heat off your stroganoff sauce and pour over servings of pasta. This recipe is set out to feed 4 people and the nutritional values reflect a serving size of ¼ of the recipe.

This recipe is definitely becoming a staple in our household. I would be totally okay making it once a week, or whenever we're having company over and I want to feel all fancy. I mean, how can you not sound fancy saying"stroganoff"?

Ingredients

  • 1 lb Flank Steak
  • 8 oz Sliced Baby Bella Mushrooms
  • 8 oz Wide Egg Noodles
  • 2 tbs Veg Oil Spread
  • ½ Yellow Onion, sliced
  • 2 cups Low sodium beef stock
  • ¼ cup Light sour cream
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon Dijon Mustard
  • ½ cup Unsweetened almond milk
  • 2 tbs Plain flour
  • 3 Cloves minced garlic
  • Olive oil spray for pan
  • Salt and pepper to taste

Instructions

  1. Using a sharp knife, slice steak very thinly and season lightly with salt and black pepper. Spray deep pan or skillet with olive oil spray and turn stove heat on medium-high. Add steak slices to skillet and sear on each side for approx 1-2 minutes on each side. Remove steak from pan and turn heat down to medium.
  2. Add veg oil spray, mushrooms, sliced onion, garlic and flour to pan and stir to combine. Cook for approx 5 minutes until mushrooms are slightly tender.
  3. In a medium bowl, add sour cream. Gradually whisk the milk into the sour cream to avoid the mixture separating. Stir in Worcestershire sauce and dijon mustard. Add the sour cream mixture to the skillet and stir in with the mushrooms and onions. Gradually add in the beef stock and continue to stir until fully combined. Turn heat down to medium-low and simmer for approx 5 minutes.
  4. Add in the steak slices and continue to simmer for 10 minutes. Add salt and pepper and season to desired taste. Meanwhile, add pasta to pot of boiling water and cook until tender. Drain and set aside. Once stroganoff sauce is done simmering, remove from heat and serve over pasta. Enjoy!

Notes

* To avoid the steak becoming too tough, avoid over cooking. The steak should be sliced thin enough to be able to be fully cooked within 1-2 minutes on each side. Avoid overlapping the slices of steak. Sear in smaller batches if needed.
